Right now, I am currently living in a basement apartment in New York. The only things my tiny kitchen is equipped with are a toaster oven, a two burner hot plate, and a microwave. As you can imagine, this gives me a hard time when I am in the kitchen. I am constantly looking for quick, easy recipes that are healthy and easy to clean up. This vegan chocolate peanut butter fudge definitely excels in all of those categories.

  • 1 1/2 cups *Vegan* Chocolate Chips (9.3oz)
  • 1 Cup Peanut Butter
  • 1/2 Cup Maple Syrup
  • 1/4 cup *Vegan* Butter or Coconut Oil

*If you are looking to make it vegan, check labels. Lots of Chocolate Chips are made with milk. I like to use Ghirardelli semisweet chips. Earth Balance is my go to vegan butter.

You can make this fudge entirely in the microwave. First, you want to start by combing the peanut butter and chocolate chips in a microwave safe container. Place the ingredients in the microwave and cook until almost melted. Take out to stir every 30 seconds until almost melted. Before completely melting, add the butter/ oil to melt for the last 30 seconds.

Once the butter, chocolate chips, and peanut butter are melted together, take mixture out of the microwave and stir in maple syrup. Once all ingredients are combined, pour the fudge mixture in a small container that you have lined with parchment paper. Smooth the fudge with a spatula if necessary. Then, place the fudge in the refrigerator to cool.

Next, all that you have to do is cut the fudge and serve. This recipe should most likely be kept in the fridge, but you may want to take the fudge out of the refrigerator about 30 minutes prior to serving. This is a great recipe to take to parties or just keep in your fridge for you to eat all by yourself.
